Maple Mustard Glazed PorkFrom the kitchen of Kevin Taylor, the BBQ Guru 1 (3 pound) pork loin 2/3 cup maple syrup 3 tablespoons Dijon mustard 2 tablespoons cider vinegar 2 tablespoons light soy sauce Combine and stir all ingredients and spread over roast in shallow pan. Surround with 1 pound carrots and about 4 - 6 medium red potatoes, halved. Roast at 350 degrees F (meat temp 155 to 160 degrees F) for about 45 minutes to 1 1/4 hours. Tip: You may need to add some liquid to your pan while this is roasting. If grilling: Marinate overnight. Reserve marinade and boil. Baste often while grilling.
