Drain and save the oil from the artichokes, then chop the artichokes. Saut? onion in artichoke oil plus the 2 tablespoons of vegetable oil.
Combine all ingredients except cracker crumbs and parsley. Put into greased 8-inch square pan. Sprinkle with cracker crumbs and minced parsley. Bake at 325 degrees F for 35 to 40 minutes. Cool, then cut into 2-inch squares.
